The cow is read by its condition, its number, and what it does. Fat, healthy cows are the settled reading: a year of plenty, work that yields, a livelihood with something left over. Lean cows reverse it into a year of tightening, and the pairing of the two is the oldest reading in the chapter. Milking a cow is read as drawing benefit from a source one already has rather than as new fortune. A cow that gives milk freely is an easy provision; one that kicks or withholds is a livelihood that has to be worked for. Owning many cows was read as land, wealth and dependants together, since in the older economy they were not separable. A cow that attacks or gores turns the reading over — a source of provision becoming a source of trouble, often through the people attached to it. Slaughtering a cow was read variously as the end of a period of plenty or as sustenance distributed, and the difference in the dream is whether the meat was shared or wasted.
This one is anchored in the text and needs no invention. In Surah Yusuf 12:43–49 the king sees seven fat cows eaten by seven lean ones, and Yusuf reads them as seven years of plenty followed by seven of drought, with the instruction to store against the lean years. That is the whole basis of the cow as a year, and of fatness and leanness as its measure. It is also plain agricultural fact: in a farming life the state of the cattle is the state of the year.
A dream of lean cows is not a forecast of hardship and a dream of fat ones is not a guarantee of ease. The interpretation given in Surah Yusuf was given to a prophet, not to a rule for everyone's sleep. It is not a ruling and it settles nothing about your finances. If the dream unsettled you, seek refuge in Allah, turn onto your other side, and keep it to yourself.

Dream interpretations are drawn from classical Islamic sources where one exists, and otherwise from general symbolism. They are guidance, never a ruling. Allah knows best.
