The turban is read by its colour, its size, and how it sits. A clean white turban worn well is read as honour that fits the wearer: standing given and carried properly. A turban that is too large, or that keeps slipping, is read as a position larger than the person in it, or a reputation that needs constant adjusting. A turban falling off in front of people is read as a loss of face rather than a loss of office. Being wrapped in a turban by someone is read as an appointment or an endorsement received from another. A dirty or torn turban is read as standing damaged by something the wearer did. A turban wound too tight, pressing on the head, is read as the strain of keeping up an appearance. Wearing a turban among people who wear none is read as being set apart, for good or for burden.
The association is historical and not symbolic: in the Prophet's time the turban was ordinary male dress and the mark of a free, respected man, and it remained for centuries the sign of the scholar and the judge. The head is also where dignity is located in Arabic usage — to raise or lower someone's head is to raise or lower their standing. A turban is that meaning made wearable, which is why the interpreters read it for religion and authority together.
This is not a sign that a person has religious standing, nor that they are about to receive one, and it establishes nothing about anyone's piety. No dream grants or withholds rank. Prayer clothes seen that day, a lecture attended, or a wish to be respected will each produce it. If it troubled you, the response taught is to seek Allah's protection from its harm, turn onto the other side, and not relate the dream.

Dream interpretations are drawn from classical Islamic sources where one exists, and otherwise from general symbolism. They are guidance, never a ruling. Allah knows best.
